Fanny Sabre took over the family estate in 2006, inheriting it from her late parents. Having honed her skills for a few years under Philippe Pacalet, where she learned to vinify wines with the utmost finesse, she meticulously crafts her own range of wines, often in micro-cuvées, as her estate only covers about 4 hectares. The vines are cultivated organically, yields are controlled, and the soil is tilled and tended with home-produced organic preparations. In the cellar, particular attention is paid to the extraction process, which is performed exclusively on whole bunches.
This Clos des Renardes Beaune, with its delicate hints of black fruit and sweet spices, is fleshy on the palate, with occasionally wild tannins, which will be tamed with long ageing. Yet, as is often the case with this estate, the wines display remarkable finesse right from their youth.
