In common with many domains, the history of Nicolas Rossignol's property is a family affair. After travelling around South Africa and learning his craft in various regions (Joseph Voillot in Volnay, Louis Latour in the Ardèche, le Vieux Télégraphe in Châteauneuf-du-Pape, and La Cardonne in Bordeaux), Nicolas Rossignol established his own domaine in 1997 with 3 hectares of vines in the communes of Pernand-Vergelesses, Aloxe-Corton, Beaune, Pommard, and Volnay. In parallel he had been vinifying wine on the Rossignol-Jeanniard family domaine since 1994. You may recall that the two domaines merged in 2011 and retained the "Domaine Nicolas Rossignol" label. Over the years, the owner has continued to broaden his horizons, acquiring new land to supplement his domaine, which now spans some 17 hectares.
This cuvée is produced from a parcel located at the foot of the Corton-Charlemagne hill, whose iron-rich soil which gives it an atypical taste profile. The bouquet is feral and animal rather than fruity. The rich tannins make it an ideal pairing for full-flavoured dishes.
