Château d'Aussières sits in the heart of Corbières. It unfortunately suffered a certain decline in the 1950s, but baron Eric de Rothschild decided to raise it from its ashes and bought the property in 1999, employing men from the region to restore it to its former glory. Winemaking is Bordeaux in style – raising in wooden vats – and the wines carry a generous fruit expression from their sun-drenched Languedoc vines.
The Syrah, Grenache, Mourvèdre and Carignan of this cuvée have been aged for between 12 and 16 months in oak barrels. After this élevage and on tasting, the wine unfurls a superb concentration marked by notes of red and black fruit and game. This wine will benefit from a little aging and will pair perfectly with flavoursome dishes.
