Following the death of his father in 1996, passionate winemaker David Léclapart decided to start running the domain in biodynamics. Having obtained certification from Demeter in 1998, he decided to ban all chemical products, leave grass to grow between the vines and use solely biodynamic treatments, to treat the surrounding flora and fauna with the utmost respect. As little Sulphur as possible is used. We particularly enjoy the fine bubbles and delicate acidity of these champagnes.
This pure Chardonnay is produced from very old vines cultivated in line with biodynamic principles on a premier cru-classified terroir. The berries are barrel-fermented and the wine is aged on the lees for 70 months. In the glass, it is gold in colour with delicate and persistent bubbles. Its bouquet is driven by yellow fruit, white pepper, aniseed and oxidative aromas and the fresh yet mineral palate lingers on fruity and spicy notes on the finish.
