Located in Vernou sur Brenne, in the heart of the Vouvray appellation, domain Vincent Carême was founded in 1999. The 14-hectare vineyard was planted entirely with Chenin by Vincent Carême and his wife, who have practiced organic farming since 2007. In the winery, vinifications are carried out in barrels and casks, using solely ambient yeasts; the wines are then matured for 12 to 18 months in vats? The vineyard now spans just over 17 hectares. This Vouvray from Vincent Carême, matured for 12 months in 400-litre casks, is grown in a limestone-clay terroir providing structure and tautness on the palate and attractive juicy fruit (pear and nectarine) variations on the nose. Vinified as a demi-sec wine with a small amount of residual sugar, the chalky persistence and rich aromas of this Vouvray make it a wine for enjoying with good food.
