Henri Jacqueson (Paul's father) took over the family land and planted it with vines. Gradually, he expanded the domaine by buying well placed parcels in Mercurey and especially in Rully. Currently, Paul (who joined his father in 1972), his wife Pierrette and their daughter Marie (who took over in 2007) own 12 hectares of well-distributed vines, mainly in Rully, but also in Mercurey (1. 3ha) and Bouzeron (0.8ha). Their soils are mechanically worked (no weed killers) because according to Paul Jacqueson, only slow and repeated ploughing properly maintains the soil. The harvest is entirely manual and the grapes are sorted and destemmed as soon as they arrive at the winery. The red wines, like the whites, are laid for 12 months in oak barrels made by several Burgundy coopers with staves from the Troncay forest and dried for at least two years. The proportion of new barrels is generally 20% for whites and 25% for reds.
Already delicious, this Mercurey premier cru will be at its peak in its 5th year. Its vinification and élevage have largely contributed to this effect. In fact, the Pinot Noir has been scraped (removing any possible acidity and vegetal notes from this grape variety with naturally aged acidity), fermented slowly, and, above all, has been the subject of a traditional barrel élevage. This has enabled its tannic structure to relax. Therefore it is the perfect wine to enjoy with a good meal.
