He managed this well and is today considered one of the great wine growers of Burgundy, hot on the heels of people like Jean Fournier. His "L'Ancestrale" cuvée was classified as a grand cru, due to the exceptional length on the palate. Sylvain Pataille studied enology in Bordeaux, but it is Burgundy whose land he defends with all his heart. He has been certified in organic farming since 2008

The sadly overlooked Aligoté grape has been restored to its rightful status by Sylvain Pataille. This grape, which he grows according to organic and biodynamic principles, is matured for one year in barrique barrels. It is therefore no surprise to find subtle, indulgent toasted patisserie and vanilla notes on the palate, enhanced with the fresh touches of citrus and white flowers typical of this variety. The attack on the palate is direct, and the finish, with its soft, creamy substance, lasts an eternity. A very attractive wine, ideal for a gourmet aperitif or delicate dishes.
