Owned by the Devillard family since 1934 (Domaine des Perdrix, Domaine de la Ferté), the Château de Chamirey dates from the 18th century. Today, Amaury and Aurore Devillard, who work alongside their father Bertrand, manage the 37 hectare domaine together (about half of which is classified as premier cru). The vines are on average 35 years old. Les Cinq is a cuvée made by combining the best parts of the five red premier crus of the Château de Chamirey to create this exceptional wine. One of the peculiarities of the domaine is the fact they wait for optimal maturity to harvest. The grapes are harvested manually, then sorted and destemmed.
This red Marsannay comes from the parcel of the same name, grown as a monopole by Château de Chamirey. The brick red soil is particularly rich in ferric oxide. The grapes are picked by hand before undergoing pre-fermentary maceration so as to extract colour from the skins. The wine macerates again after fermentation, which serves to soften tannins. It is then matured for 15 months in oak barrels (of which 25% is new oak). The nose is subtle, with black fruit aromas. On the palate, it is well-structred by firm, powerful tannins.
