This young domaine is a star in the making and without doubt a future Rhône icon. As a daughter and granddaughter of winemakers, Elodie Balme grew up amongst the vines. After studying wine business and oenology, Elodie threw herself in the deep end and vinified her first 3.5 hectares in 2006. In 2009 she expanded she expanded further and built a cave. Today, Elodie cultivates 17 hectares of 40 year old Grenache, Carignan, Mourvèdre, Cinsault, Syrah, Merlot, and Clairette vines in the Rasteau, Roaix and Buisson communes.
With this Côtes-du-Rhône Villages Roaix, Elodie Balme focuses on power and spices. Suitable for ageing, wait 10 years before showcasing its aromatic intensity with flavoursome dishes (game, spicy dishes etc). The winemaker has vinified Syrah, Carignan, Grenache and Mourvèdre with their indigenous yeasts. Barrel fermentation is longer than that of her simple Côtes-du-Rhône. It lasts 20 days with daily pumping-over and rack and return during barrel fermentation. The wine is then aged in concrete vats, with no fining. After having been stabilised and lightly filtered, the wine is finally bottled.
