Domaine Billaud-Simon was founded in 1815 and covers 17 hectares of the most beautiful terroirs of Chablis, with four grand crus (Les Clos, Les Preuses, Vaudésir and Les Blanchots) and four premier crus (Montée de Tonnerre, Mont-de-Milieu, Fourchaume and Vaillons). In 2014, the domaine was bought by the Faiveley family, who confirmed their determination to maintain the Bernard Billaud style with precise wines, which stand out for their fine minerality.
Mont de Milieu is a parcel right at the edge of the Chablis appellation, found towards Tonnerre. On the right bank of the Serein, the land faces south/south-east with Kimmeridgian soil. The vines have an average age of 53. The grapes are picked by hand at perfect maturity. Once harvested, they are pressed and macerated for 5 to 7 days. After fermentation, the wine is matured for 14 months. It delivers great aromatic richness thanks to its notes of citrus fruits and white flowers. Amply, juicy, aromatic and very persistent, with a chalky, flinty finish.
