Today it's Fabien Moreau, an oenologue by trade, who's at the helm of Domaine Christian Moreau -a domain possessing plots ideally situated in grands crus. They are extremely well-kept, and the berries are picked by hand in order to better control the quality of the future juice produced. It is vinified with the view of producing fine, just and precise wines. Thus, Fabien Moreau uses wooden containers frugally, allowing the wines to develop a certain suppleness, even a velvety texture in the mouth.
The Moreau family owns a few parcels of fifty-year-old vines located on the left bank of the Serein river, which flows through the village of Chablis. Father and son harvest the grapes by hand before sorting them and maturing them on fine lees for six months. The attractive light golden appearance reveals a fine wine which allows the Chardonnay its full range of expression. The bouquet exudes mineral, floral and fruity (citrus) aromas. On the palate, the wine is generous, soft, rich in flavours and – above all – long. This Chablis Premier Cru is a wine made for keeping, and for accompanying seafood dishes or goat's cheese.
