About the producer

Domaine Adélie was the final acquisition of Maison Albert Bichot; it is located in Mercurey and bears the name of Albéric Bichot's daughter who was born in 2003. The vineyard, composed of two plots, spans four hectares and includes a premier cru, Champ Martin. In the vineyards, work is sustainable, and carried out using organic fertilisers. In the wine cellar, vinifications are done separately for each plot, with minimal intervention.

About the wine

This Mercurey comes from 30-year-old vines grown on brown, pebbly, clay-limestone soils. Manual harvests and fermentation in temperature-controlled conical oak vats precede an élevage of 14 to 16 months in oak barrels. This wine, with its animal, fruity aromas should be drunk young alongside grilled or roasted red meats.
