Domaine Adélie was the final acquisition of Maison Albert Bichot; it is located in Mercurey and bears the name of Albéric Bichot's daughter who was born in 2003. The vineyard, composed of two plots, spans four hectares and includes a premier cru, Champ Martin. In the vineyards, work is sustainable, and carried out using organic fertilisers. In the wine cellar, vinifications are done separately for each plot, with minimal intervention.
Produced from 20-year-old vines grown on clay-limestone soils, the Chardonnay is harvested by hand before fermenting in oak barrels for six weeks and undergoing élevage in barrels for 14 to 16 months. If opened during its youth or after 5 years of cellaring, it will express aromas of white fruits, and vanilla and lightly oaky aromas from its élevage. On the palate, its minerality and tension give it a nice length, making it an excellent pairing indeed with foods such as poultry in sauce, regional cheeses or even fish.
