Domaine Modat is owned by Philippe Modat, a Paris clerk of court by profession and – more importantly – a great lover of vines, which his parents owned when he was young. Later in life, having become a serious wine enthusiast, he sought to acquire a domain in Roussillon. This led to his purchase of a domain in Cassagnes in 2007, which now covers 24 hectares. He divides his time between his Paris life and his domain at the foot of the Corbières – where he spends at least one week every month – while his father takes care of the domain's day-to-day business. The vines have been cultivated from the start in accordance with organic principles, and obtained certification in 2014; a few hectares have even been converted to biodynamics. A little-known domain, yet one which produces a very attractive range of extremely well-made wines in a lacy southern style, with beautiful textures and freshness.
Sans plus attendre is vinified with native yeasts and aged for 15 months in stainless steel vats (65%) and 10 months in barriques of one wine (35%). The nose is powerful, unfurling aromas of prunes, liquorice as well as well integrated woody notes. On the palate, the wine is dense and juicy, full-bodied with slight acidity and well-balanced. This wine pairs beautifully with red wines, lamb and veal.
