Information
The three young winegrowers Giambattista Cilia, Giusto Occhipinti and Cirino Strano, founded Azienda Agricola COS in 1980 in Bastonaca, in south-eastern Sicily, initially producing 1,470 bottles from just 3 hectares. They subsequently expanded the domaine to 50 hectares and made the transition to biodynamic management and the use of terracotta amphorae in 2000. The domaine name COS is an acronym for the names of the three friends who founded it. Their cuvées overall are of good quality and are a fine tribute to their great terroirs whose winemaking reputation extends right back to Antiquity.
The Nero d'Avola that composes this organic wine has been fermented naturally with native yeasts. It reveals indulgently fruity, spicy notes, making the perfect accompaniment for country terrines, tasty pasta dishes and risottos.
