A 12th century abbey, Château Sainte Roseline is now a huge wine property and a popular site to visit. The property has belonged to the Teillaud family since 1994. First Bernard, then Aurélie Bertin and her daughter have restored and developed the property. The sumptuous site has a park in which an exhibition of works by a famous sculptor is held every year. You can also visit the listed chapel, which contains the Saint Roseline shrine, a fresco by Chagall and a bas relief by Giacometti. A Cru Classé de Provence, the château is in the commune of Arc-sur-Argens.
A rosé produced from some of the best parcels in this domaine. The fruit is meticulously sorted and destemmed before undergoing pneumatic pressing. In a process called “stabulation”, the juice is left on the lees at a low temperature to allow the aromatic components to transfer into the juice. Racking then helps to acheive a clear juice. Temperatures are maintained at 18°C during alcoholic fermentation, which lasts for between 10–14 days. Malolactic fermentation is then blocked through refrigeration before maturation on its lees. Though pale in colour, this cuvée is wonderfully expressive; in the mouth there is a perfectly calibrated balance between freshness, roundness and acidity. An ideal rosé to accompany flavours of the sea.
