Paul Pillot took over his father Henri’s work in 1968. It was in 2004 (after internships in South Africa and Australia) that Thierry Pillot succeeded his father at the head of the domaine alongside his sister Chrystelle. This family domaine on the Côte de Beaune has ideally located plots in Saint-Aubin and Santenay. But the domaine owes its reputation to six terroirs of premiers cru in Chassagne-Montrachet. Particular attention is paid to the vineyard with principles inspired by (non certified) organic farming. The domaine’s red wines are superb and confirm (if there were ever any doubt) that the Chassagne terroir can generate wonderful Pinots. 70% of the wines are white but the domaine wants to continue this village tradition. The wines are not extracted and are aged for 12 to 18 months in oak barrels (20 to 30% new barrels). After ten years, these wines are unquestionably one of the best of the appellation.
The "Clos Saint Jean" premier cru offers a beautiful aromatic complexity; a mix of peach and lemon aromas. It offers excellent laying-down potential.
