Domaine de Bonserine in Ampuis own parcels in the prestigious Côte-Rôtie (9ha) and Condrieu (1ha) appellations. The wines are made principally from “Serine”, an old variety of Syrah that offers unexpected aromas. Sustainable agriculture is at the heart of this domain's philosophy and cover cropping and green harvesting ensure a controlled yield. The parcels are vinified separately and with indigenous yeasts that occur naturally on the grape skins. The wines then undergo malolactic fermentation in barrels. This domain is known for producing wines of great aromatic complexity.
This cuvée is made entirely of the serine-vielle variety of Syrah and is grown in an environmentally sustainable way, without the addition of yeast. Yeast is naturally present on the grape skins. Malolactic fermentation takes place in a barrique and then aged for 22 to 36 months in barrels. When drinking, the wine immediately surprises us with its extremely sustained ebony hue. On the nose it is complex with multiple and varied notes: empyreumatic, flowery, spicy and smoky notes. On the palate, it is a full-bodied and velvety nectar which unfurls with flavours of black fruit and a sweet sensation of cocoa. A real gastro wine to try with game!
