Marie Valette and Laurent Maynadier, whose family have been producing wine for thirteen generations, have only one concern when it comes to this château in the maritime region of Fitou: quality. The terroir consists of hard limestone and schist, less than two miles from the sea and lakes. Its fifteen hectares are home to a multitude of grape varieties: Carignan, Grenache, Mourvèdre and Syrah for the reds, and Grenache Blanc, Roussanne and Muscat Petit Grain for the whites. Viticultural methods are intended to be environmentally friendly, with the château adhering to the "Terra Vitis" specification. Yields are low, indigenous yeasts are favoured, and élevage is conducted in large wooden containers. The proximity to the sea gives the domain a wide thermal range, which is useful for obtaining refined, well-balanced wines.
A blend of 50% Black Grenache with Carignan Noir and Syrah, this Fitou is made the traditional way with de-stemmed grapes. Fermentation and ageing takes place in stainless steel vats and 20,000 bottles are produced. This fruity wine can be drunk immediately with plain dishes. For a more unusual pairing, a cous cous dish would bring out the spicy notes in the Syrah.
