It has now been thirty years since Gilles Berlioz changed career paths from landscaping to wine making. Passionate and modest, he is careful in the cultivation of his Chignin terroirs, going as far as to work his land with horses. Converted to organic growing in 2005, this 5-hectare domain has recently been certified biodynamic by Demeter. The wines, vinified as one cuvée per terroir, are wonderfully accomplished, pure, mineral and delicate. They aren't made in large quantities, but these cuvées perfectly represent their terroirs. Impassioned by the evolution of his work, Gilles Berlioz is always looking for new ways to improve his vines and growing techniques, always with the aim of better respecting the nature that surrounds him.
This cuvée owes its name to Mondeuse, the grape variety from which it’s produced, and the fruit of biodynamic viticulture and delicate vinifications. It harmoniously expresses fleshy fruit lifted by peppery, floral touches.
