Located in Chorey-lès-Beaune, at the foot of the Corton mountains, Domaine Tollot-Beaut extends over 24 hectares including very fine plots. This vineyard was created at the end of the 19th century and is run by three cousins, Nathalie, Jean Paul and Olivier. The vine is traditionally ploughed, no fertiliser is brought and a green harvest means they can limit the yields so the remaining grapes can mature. Élevage of red wines varies between 16 and 18 months and the proportion of new barrels, always minor, depends on the vintage. This rigorous and long-term work means they can make elegant, balanced wines. The wines have a fine personality are of a high standard. Unfortunately, most of the production is exported and it is difficult to obtain these wines in France.
This Corton-Charlemagne is aged for 16 months in oak barrels. Its nose evokes buttery, lactic notes and white-fleshed fruit (pears). On the palate it has delectable fullness, brioche aromas, freshness and a long finish with lovely bitter notes. This wine can be either drunk before a meal or it can accompany seafood-based dishes.
