Vaona Odino is a traditional 10-hectare family domaine situated in Veneto. Alberto Vaona, a member of the third generation, began producing wines from his vines in 2000 and is now at the helm of the domaine. With his wife, he grows the main grape varieties including Corvina, Corvinone, Rondinella and Molinara, and is gradually making the transition to organic management. He produces authentic wines which are easy to drink, bursting with fruit, fresh, and crisp.
Valpolicella Classico Superiore exudes aromas of very ripe red berries (cherry, redcurrant), black berries and spices. The palate is robust, with mellow tannins and a well-balanced structure. The wine has been made according to the "Ripasso" method using Amarone della Valapolicella grape skins. Shortly before the end of fermentation, the Amarone is separated from its skins by racking. The skins are not pressed, and are added to a vat of Valpolicella which has finished fermenting. This process also transfers yeasts, which restart the fermentation of the residual sugar contained in the Amarone skins. This enhances the colour, flavours and tannins of the wine to which they are added.
