Domaine Billaud-Simon was founded in 1815 and covers 17 hectares of the most beautiful terroirs of Chablis, with four grand crus (Les Clos, Les Preuses, Vaudésir and Les Blanchots) and four premier crus (Montée de Tonnerre, Mont-de-Milieu, Fourchaume and Vaillons). In 2014, the domaine was bought by the Faiveley family, who confirmed their determination to maintain the Bernard Billaud style with precise wines, which stand out for their fine minerality.
Out of the 17 hectares at Domaine Billaud-Simon, there are 4 Chablis grands crus and 4 premiers crus. The Montée de Tonnerre cuvée is classed as a premier cru planted in kimmeridgian chalk soil. Its 2.15 hectares of vines are around 45 years old and face south-east. Once picked by hand, the Chardonnay grapes are pressed before an alcoholic fermentation of between 15 and 18 days. Maturation lasts 14 months, sometimes including some time in oak casks. The cuvée has a lovely, yellow hue. It offers a mineral, fruity nose with some floral notes. The palate, rich and complex, has a creaminess to it with a long finish. We recommend serving this wine with a tuna tartare or oysters at around 10-12°C. The bottle can be aged for up to ten years.
