Vincent Paris is an accomplished Rhône winemaker based at the southern end of the village of Cornas. In 1997, he inherited one hectare of vines from his grandfather marking the beginning of his success story. Ten years later, he acquired La Geynale, a very fine parcel from Robert Michel. Today, he tends ten hectares of vines, mostly in the Cornas appellation, along with some Saint Joseph and Vin de Pays. He cultivates his vines according to sustainable methods, as naturally as possible (without insecticides or chemical fertilisers). The incredible incline of his plots has inspired the names of his cuvées: Granit 30 and Granit 60. Vincent Paris crafts wines of wonderful purity, with luscious, generous fruit, bottles that can be enjoyed both in their youth and after long cellaring. Granit 60 is named after the granite soils and the steep slopes (at a 60° incline) of the parcels from which it originates. The Syrah vines, approximately 60 years old, are cultivated with sustainable practices, harvested by hand, and fully destemmed. The berries undergo cold maceration (around 12°C) for a week before fermenting with native yeasts. During the alcoholic fermentation, Vincent Paris performs punch-downs and pump-overs twice a day to enhance the extraction. The wine is then aged for 3 months in tanks, followed by one year in used oak barrels, with the goal of preserving the distinct aromas of this unique terroir.
This Cornas combines power and elegance, offering notes of dark fruits, poached pear, spices, and violet. Its ample, round, and refined mouthfeel culminates with elegance. Its impressive length and ageing potential make it a wine worth cellaring. This wine pairs beautifully with dishes like lamb tagine with prunes or a classic tournedos Rossini.
