The domaine, which is internationally renowned for its Chardonnays and Sauvignons, is at the cutting edge of modern oenology and technology, but has nevertheless established a reputation for revisiting age-old practices such as wooden containers, terracotta amphorae and indigenous grape varieties including Ribolla Gialla. To cite Josko Gravner “modern oenology has helped me to understand that previous generations were right.”
This blend of Sauvignon, Pinot Gris, Chardonnay and Riesling Italico is fermented on its yeasts in amphorae before being left to mature for 3-5 years in barrels. It has a clear, slightly cloudy visual aspect as a result of not having been filtered. The palate is rich and astonishing – just like its rounded, elegant body with ripe tannins. This perfectly-balanced wine has sacrificed none of its fresh richness, even a few days after opening.
