Information
The three young winegrowers Giambattista Cilia, Giusto Occhipinti and Cirino Strano, founded Azienda Agricola COS in 1980 in Bastonaca, in south-eastern Sicily, initially producing 1,470 bottles from just 3 hectares. They subsequently expanded the domaine to 50 hectares and made the transition to biodynamic management and the use of terracotta amphorae in 2000. The domaine name COS is an acronym for the names of the three friends who founded it. Their cuvées overall are of good quality and are a fine tribute to their great terroirs whose winemaking reputation extends right back to Antiquity.
Rami is produced from Inzolia and Greciano grapes (50% each). This white wine has a slightly orange colour, a bouquet of orange blossom, citrus and slightly iodised spices. In the mouth, the wine is very fresh, with hints of nuts, and a beautifully thirst-quenching bitterness at the finish. It is a very expressive, easy-drinking wine (11.8% alcohol), forming the perfect accompaniment to grilled fish, squid and ripe cheeses.
