Antoine Foucault (son of Clos Rougeard’s Charly and nephew of Nady Foucault) and his partner Caroline Boireau planted their domaine in Chace in the Saumur region in 1999. This organic vineyard has around 6 hectares on the famous hillsides of Brézé, planted predominantly to white. The wines are barrel-aged for a long time in magnificent troglodyte caves. The result indisputably tops all expectations. Both red and white wines from Domaine du Collier are classed as the highest in the region as they perfectly express their terroir and are very pure, fresh, deep, and concentrated.
Saumur Blanc du Domaine du Collier exudes fine aromas of white fruit (apple) and floral notes. Rather sober on the palate, it is characterised by great freshness, minerality and a dense substance. This wine goes well with both white meat and fish.
