Maison Albert Bichot was created in Burgundy in 1831. The famous Chardonnay wine traders acquired many plots throughout Burgundy. Its fabulous vineyards are divided between several areas which have autonomous teams and cellars. Maison Bichot thus owns the Long-Depaquit domaine in Chablis, the Clos Frantin domaine in Nuits-Saint-Georges (as well as the Château Gris on a monopole of the village) and the Adélie domaine at Mercurey. Finally, on the Côte de Beaune, at Pommard, it owns the Domaine du Pavilion, mentioned here. This includes 17 hectares of vines, 8 of which are for white crus. The domaine follows a biological approach to vines with a respect for nature and a control of yields. The winery of the domaine is located in the middle of the Clos des Ursulines in Pommard
Meursault is a legendary Burgundy appellation; an ever-present name in discussions of the region's white wines. The soils are clay-limestone, producing rich wines. The Domaine du Pavillon's Meursault Village presents the richness on the palate that is so characteristic of this commune. It is balanced out by the acidity in the middle of the mouth; after a few years, the finish suggests honey and hazelnut.
