Owned by the Devillard family since 1934 (Domaine des Perdrix, Domaine de la Ferté), the Château de Chamirey dates from the 18th century. Today, Amaury and Aurore Devillard, who work alongside their father Bertrand, manage the 37 hectare domaine together (about half of which is classified as premier cru). The vines are on average 35 years old. Les Cinq is a cuvée made by combining the best parts of the five red premier crus of the Château de Chamirey to create this exceptional wine. One of the peculiarities of the domaine is the fact they wait for optimal maturity to harvest. The grapes are harvested manually, then sorted and destemmed.
Château de Chamirey’s Mercurey flies the flag for the appellation. It accounts for 17 hectares of the domaine and is very representative of its dense and fruity style. As with the premier crus, harvesting is done by hand, the grapes are stemmed, fermentation takes about two weeks and maturing about one year.
