Founded in 1975 by Chantal Lescure and Xavier Machard de Gramont, Domaine Chantal Lescure is a family domaine that now belongs to their two sons: Aymeric and Thibault Machard de Gramont. An owner harvesting 18 hectares of AOC vineyards, the Domaine Chantal Lescure extends from Chambolle-Musigny in Côte de Nuits to Meursault in Côte de Beaune. In 1996, when Chantal Lescure died, Aymeric Machard de Gramont took over the management of the domaine. The entire organisation of the domaine, and in particular how to work the vines was then re-considered. François Chavériat was hired as a cellar master and has been moving the domaine towards agrobiology since 1997. Today, the domaine is certified organic
This Pommard stems from the Premier Cru Les Bertins and, more specifically, from a one-hectare plot of Pinot Noir. The old vines behind this wine flourish on the southern slopes of the commune of Pommard, near vines grown in the Volnay appellation. They draw their pedigree from brown limestone soils sitting on a bedrock of hard limestone and scree. To produce this wine, the estate – certified organic since 2009 – is committed to meticulous viticultural methods and gentle winemaking techniques that respect the identity of the terroir. The grapes are macerated for several days before undergoing alcoholic fermentation triggered by native yeasts. The three- to four-week vatting process is punctuated by a few punchings of the cap to extract the finest materials. The wine then matures on its lees in oak barrels, with a carefully controlled percentage of new wood ranging from 30 to 50%. The ageing process lasts around twenty months. On tasting, the beautiful ruby-red colour reveals notes of black fruit complemented by subtle toasted notes, typical of oak ageing. With well earned cellaring, the wine will develop aromas of leather, cocoa and game, while its body will become fuller and more refined.
