The origins of Domaine Amiot-Servelle go back to 1920, when Clément Tachot began to work on some vines in Chambolle-Musigny. Later, in 1950, his daughter and his son-in-law Jean Servelle created the Servelle-Tachot domaine, which, in 1989, became the Amiot-Servelle domaine. The 7 hectares of vines are organically grown, and the domaine is currently run by Christian and Elisabeth Amiot-Servelle.
Amiot-Servelle is one of the lucky few domains to own some parcels in Clos Vougeot. Its parcel spans 40 ares, where 70-year-old vines produce a tannic, fruity and intense wine. Made for cellaring, the wine undergoes traditional vinification in open wooden vats with pumping over and punching down, as well as a brief cold maceration which serves to extract colour and flavor. The wine is raised in oak barrels (20% new oak) for 18 months.
