Domaine Jean-Paul and Benoît Droin is owned by one of the oldest families in Chablis, who have been working the vines for nearly five centuries. In 1547, Jehan Droin was already cultivating an enclosed vineyard. Today, the domaine is managed by Jean-Paul Droin and his son Benoît; it covers 25.5 hectares, including 5 grand crus and 8 premier crus. It has risen to the top of Chablis, offering precise, generous wines with a fine mineral persistence.
Classed as a premier cru, Mont-de-Milieu is distinguished by a clay terroir that assimilates it well with some of Chablis’ grands crus. This cuvée comes from vines with an average age of 40, harvested by hand. Its vinification involves very little intervention and a maturation of 10 months in barrels and vats. To taste, this wine presents the fresh notes typical of its grape variety and its terroir (minerality, white flowers and white fruits). If you like evolved wines, age it for several years in the cellar – it will grow in complexity.
