The Singla family, who come from a large Mediterranean family (Cévennes), experienced ‘epic’ fates (they lost their titles and domains during the Edict of Nantes) before buying land in Roussillon in the 19th century and settling in Rivesaltes to farm a 250-hectare vineyard in the Vallée de l'Agly. It was Laurent’s (the current owner) grandfather who had the idea to keep a few of bottles of the best vintages, as insurance in case of a bad harvest or bad hail. Today the domain, managed by Laurent de Besombes Singla, has two farmhouses and two terroirs, on 70 hectares in the Côtes du Roussillon, Rivesaltes, Muscat de Rivesaltes and Vins de Pays appellations, all organic and biodynamic. At the foot of Mont Canigou, on the white, pebbly land of the Camélas commune, the ‘Mas d’En Alby’ has 25 hectares of vines. The ‘Mas Passe Temps’, which began producing 100% Grenache noir in 2001, is situated on the foothills of the Corbières Catalanes and is spread over 45 hectares in the middle of the rocky garrigue and pine forests. The domain doesn’t produce wines in great quantity but the quality is excellent.
A judicious blend of Grenache noir, blanc, gris, Malvoisie and Maccabeu, this amber wine is a true jewel of the Roussillon. Produced from a terroir of clay, limestone, schist and pebbles, this cuvée unveils incredible aromatic variety and intensity. The oxidized colour, a beautiful rich amber, gives off an immense bouquet of notes, including truffles, dried fruits, sweet spices, coffee, vanilla and caramel. On the palate, there is an explosion of flavours and a silky, velvety texture. The finish is never-ending. Pair this wine with blue-veined cheeses, chocolate or walnut desserts, or drink as a digestif.
