The domain underwent a complete transformation in the 1990s. That was when the Paux-Rosset family bought Château La Négly and decided to change grape varieties to improve quality, with the introduction of Syrah, Grenache and Mourvèdre. Sustainable cultivation methods are painstakingly employed: debudding, leaf thinning, manual harvesting, double sorting on tables and limited yields. Château de la Négly offers a series of very flavoursome wines produced under the Languedoc-la-Clape AOC. Jean Paux-Rosset has also produced three excellent cuvées: Porte du Ciel, Clos des Truffiers and Ancély. The first two are produced from Syrah, and the last features Mourvèdre. These are highly distinguished wines.
The Syrah and Grenache in this cuvée have been cultivated on very pebbly, sand, clay and limestone soil on the slopes of the Massif de la Clape. In the cellar, the Syrah has been vinified in wooden vats and the Grenache in concrete. The wine has been matured in barriques for one year. We recommend opening it at least three hours before serving to allow this intense ruby red wine to release all its fruity (raspberry, blackberry), chocolate and salty (black olive) notes. Its impressively concentrated palate culminates with some velvety and ripe tannins that soften over time. This very fine Languedoc wine can be drunk in 10 or more years' time.
