Created in 1952 by Roger Sabon, the eponymous domaine in Châteauneuf-du-Pape has several parcels on a range of terroirs and therefore has a large range of cuvées. The terroirs have the famous “galets roulés” and sandy limestone soils. All the wines have their own unique personality. They offer wonderful balance between tannic structure, acidity and natural freshness. They stand out for their expressive character. Today the domaine is managed by Denis and his son Julien who practice sustainable agriculture.
What is the secret of Sabon? This cuvée is made with old Grenache. These are carefully handled: manually picked, there is meticulous sorting, partial destemming, temperature-controlled fermentation and maceration for a month. Daily pumping-over and regular punching-down are carried out before ageing for eighteen months in troconic vats. The result is a deep, full-bodied and generous wine. The Grenache elegantly expresses its tannic structure which is balanced by wonderful freshness.
