Created in 1952 by Roger Sabon, the eponymous domaine in Châteauneuf-du-Pape has several parcels on a range of terroirs and therefore has a large range of cuvées. The terroirs have the famous “galets roulés” and sandy limestone soils. All the wines have their own unique personality. They offer wonderful balance between tannic structure, acidity and natural freshness. They stand out for their expressive character. Today the domaine is managed by Denis and his son Julien who practice sustainable agriculture.
A good wine for ageing, cuvée Prestige is a blend of Grenache, Syrah, Mourvèdre, Counoise and Vaccarèse which are grown in a sustainable way on clay-chalk rich soil. They are harvested by hand and carefully sorted before being fermented using temperature control. Colours and tannins are extracted slowly and regularly during the one-month maceration process. The wine is aged for eighteen months in large oak barrels (40 and 25hl). This wine has a deep hue, an expressive and elegant nose which mixes red and black candied fruit, with empyreumatic, spicy notes as well as notes of black olives. Tannins are present and taut. They contribute to the impression of power and length.
