Haut-Brissan is an homage to the domain’s old, organic Grenache vines. One of Domaine Saladin’s historic parcels, it enjoys superb exposure at the top of the slopes and pebbly soil. Around 50 years old, the vines are cultivated without recourse to pesticides, herbicides or insecticides. The grapes are harvested by hand before a semi-carbonic maceration in whole bunches. They are lightly pressed and then vinified and matured in concrete vats.
The aim of all of these processes is to craft a wine that is flavourful and easy-drinking, carried by its fruit. It can be uncorked within ten years and will pair nicely with generous dishes like pumpkin gratin or roasted sweet potato with mushrooms.
