About the wine

To craft their Volnay, the Beaune domain Jean-Marc Volnay is dedicated to the growing of Pinot noir, Burgundy’s noble varietal. There is a healthy competition between the vines, the soils are ploughed so that the roots push deeper, and the grapes are harvested by hand with strict sorting processes. Once in the winery, the grapes are destemmed before a three-week vatting. During this time, the fruit is macerated to confer its colour and aromas. There is then an alcoholic and malolactic fermentation before maturing in casks (30% new wood) for 13 months. In the glass, this is a ruby-red wine with an aromatic bouquet that opens on notes of red fruit (raspberry, cherry), violet, rose, spices, and musk. We recommend keeping this cuvée for a few years in the cellar to let its powerful tannins flourish. This bottle deserves to be served with a special dish.
