Chante-Cocotte is a domain that was established in 2007 under the auspices of Régis Franc, an illustrator by trade. Patient as he is, he waited three years to launch his first red cuvée, and four for his first white. Located to the south of the Alaric Mountain, the domain is thus sheltered from the maritime breezes and the dominant north-easterly wind that dries vegetation out with intense heat. Not far away, a stream and a source ensure good drainage and a certain freshness underground. This Pays d’Oc wine has a lovely, ruby hue from which emanates a complex bouquet of dark fruit, gentle spices and tobacco notes. The silky tannins create a rounded texture. Persistent, this wine is perfect to accompany regional dishes.
