This philosophy is based on vinification by parcel as all the parcels have very different soils and altitudes. In the cellar, the domaine has opted for an organic style of vinification. This ensures that the grapes are treated more naturally and gently. Wines age in a cellar carved into mountain rock. This provides natural temperature control and offers energy savings.
