Kujira is a grain whisky produced at the Shinzato distillery from Indica and black Koji rice, like awamori, a spirit produced in Okinawa. Aged for 20 years in bourbon casks.
About the Producer Kujira
Kujira is a rare and unique category of Japanese whisky. The Okinawa archipelago in southern Japan is home to three distilleries, Masahiro Shuzo, Shinzato Shuzo and Kumesen Shuzo, all of which produce traditional spirits. The company is named Kujira after the Japanese word for “whale”, an animal that represents calm, power and the essential balance between humankind and nature. These single grain whiskies are distilled from local rice in a distillation process dating back to the ninth century that gives the whiskies their unique taste. After long fermentations, they are distilled in a pot still and matured in warm, humid warehouses that offer unique ageing characteristics. There are four Kujira whiskies: an 8 year old, a 12 year old sherry cask, a 20 year old and a 30 year old. The Japanese producer is dedicated to developing its unique and traditional expertise.
