Barbaresco DOCG Pajoré Sottimano DOCG 2010
The wine
Produced from 45 to 55-year-old vines, this cuvée has a ruby red colour. The palate offers a wide range of aromas and there are lots of tannins. Age for some years and the tannins will become integrated into the wine. This cuvée will lift flavourful meats.
About the Producer Sottimano
Rino Sottimano acquired this domaine in 1975 and was joined by his son Andrea in 1994. The domaine places a great emphasis on tending its vines and cultivating its various terroirs organically. Combining tradition and modernity, the domaine ages its wines in barrels, following the Burgundy method (20% in new barrels), rejecting large barrels as incompatible with the ethos of the domaine. The wines are not filtered or fined.
