The wine
In Burgundy, the vines classed as grand cru surround the Corton hill, with the three villages of Pernand-Vergelesses, Aloxe-Corton and Ladoix-Serrigny sharing these marvellous terroirs between them. ‘Les Renardes’ are parcels found in the middle of the slopes, with vines planted in chalk and marl soils that date from the Jurassic age. Pascal Maillard aims to preserve an average of 6-7 bunches per vine stock, harvested by hand and placed in 40-litre cases (since the 2016 vintage). Only the best bunches are selected for the 12-15 day vinification in temperature-controlled conditions, including one or two daily stirrings. During the 18-month maturation, this cuvée is placed in 228-litre oak barrels, with 75% new wood for the wine to take in. When tasting, make sure to give this wine a good swirl in the glass so that it releases its waves of strawberry and raspberry, as well as its peppery notes.
About the Producer Maillard et Fils
The Maillard family has been part of Burgundy's viticultural scene since 1766. In 1952, Daniel Maillard, father to Pascal, decided to dedicate himself to this career, concentrating on enlarging the domain and growing cuvées in a way that respects the terroir and the soil. The domain has gone from 2 hectares to 19, shared across the areas of Aloxe-Corton, Pommard, Beaune, Ladoix-Serrigny, Chorey-les-Beaune, Meursault, Volnay, and Savigny-les-Beaune. In the vines and the winery alike, the methods are traditional, and all the cuvées are classed as grand cru in the regional appellation. They are worked meticulously, from the selection of the grapes to the vinification and the maturation in 228-litre oak barrels.
