Harvesting is done by hand and a pneumatic press is used. Fermentation is done with native yeast and in glazed cement vats. The wine is aged on lees for four months to preserve its freshness and vivacity. This cuvee is not chaptalised and comes in at 11° alcohol. Sulfur is added at the end of the alcoholic fermentation to avoid malolactic fermentation. The wine should be consumed quickly. It is refreshing and goes well with oysters, for example, thanks to its iodised flavour and minerality.

About the Producer Jo Landron
Today, Jo Landron is a key Loire wine producer having helped reinvigorate the fortunes of Muscadet wines which have long been considered a simple aperitif. In 1979 Jo joined the vineyard which his father had acquired in 1945. Convinced of the benefits of organic farming, he persuaded his father to convert the domain to organic in 1987 and went on to adopt a biodynamic approach in 2011. There are currently 48 hectares of vines spread across two properties - Château de la Carizière in la Haye Fouassière, and Domaine de la Louvetrie on the banks of the Sèvre. Jo Landron grows Melon de Bourgogne, also known as Muscadet, which is the regional grape variety par excellence. His wines have a surprisingly good texture and acidity with some light salty notes. They are the ideal accompaniment at the table but some cuvées are a delight to drink on their own. This domain has worked its way to the top of the appellation and its wines can be found in many high-end restaurants. Half of its output is exported.
