The wine
It is said that it is actually at Savigny, a commune adjacent to Beaune, that the Côte de Beaune truly begins, which is seen in its wines by their extremely delicate and fine character. Flanked by Beaune mountain to the south (highest point is 409 metres) and by Noël wood to the north, the vineyards cover the two slopes of the Rhoin valley. They count 370 hectares of vines in total producing a red wine (140 in premiers crus) and 10 hectares of white wine.
Savigny les Beaune wines are medium-coloured. Their bouquet is elegant, fairly strong, and dominated with Morello cherry-blackcurrant-raspberry, which develops into strawberry and forest floor after a few years. Supple, discretely tannic with little acidity, they have a like light and delicate structure, which gives them a feminine touch. The premiers crus have more structure, strength and character; they require a longer cellaring.
