The wine
L’Ubac sticks out from the crowd for its very particular terroir of gneiss and black mica, its north-facing exposure and steeply sloping vineyards. In the cellar, Cyril Fhal carries out gentle macerations and an 18-month élevage in large containers. At once vibrant and light, this wine for cellaring will arouse real emotion with its aromas or black fruits, pepper and liquorice. Decant this wine two hours before serving with red meat.
About the Producer Clos du Rouge Gorge
Cyril Fhal has been pampering his vines since his arrival in Roussillon in the early 2000s. So great has been his input that his wines are imbued with this delicate love, revealing themselves to delight wine-lovers with their precision, refinement and elegance. The key to his success? The biodynamic cultivation of all five hectares of his vines. His old Carignan, Cinsault, Grenache and Maccabeu vines are located at an altitude of between 200 and 250 metres, and their yields are restricted to 18hl/ha.
