The wine
This Puligny-Montrachet premier cru Les Folatières by Vincent Girardin is made from 40-year-old Chardonnay grown in gently sloping soils of clay and chalk. The vines are worked with great care, pruned using the Guyot method, trained, and de-leafed.
The grapes are harvested by hand and slowly pressed in a pneumatic press. The must is cold-settled and transferred to oak casks where wild yeasts set off alcoholic fermentation. The wine is then matured on fine lees for 18 months before refining its ageing process in steel vats.
All of this goes into crafting a fine, white wine, elegant and rich in aromas of white flowers, white fruits, and more complex notes of hazelnut and toasted almond. Lively and energetic, this wine can be enjoyed on its own as an aperitif or with delicate dishes like fish or poultry.
About the Producer Vincent Girardin
Vincent Girardin comes from a family that has cultivated vines since the 17th century. But the real history of Domaine Vincent Girardin is recent, since it began in 1980 when Vincent Girardin took back the two hectares of vines from his parents (the family have been wine growers since the 17th century) to produce his own wine. He produces wines from environmentally-friendly vineyards (no herbicides or insecticides, natural compost and from local farms, manual harvesting), and in a very natural way. The vineyard now covers 20 hectares, spread over 42 plots, and produces wines from prestigious appellations in the Côte de Beaune (Meursault, Puligny Montrachet, Chassagne Montrachet, Saint Aubin, Santenay, Savigny Les Beaune, Aloxe Corton, Volnay and Pommard). Vincent Girardin had taken his Burgundy trading house to the top since it was founded in 1992. Bought by the Compagnie des Vins d'Autrefois in 2012, the technical team however remained the same, led by Eric Germain from Meursault. The selection of winemakers remains demanding, as is the high quality of the wines. The red wines are supple, fruity and elegant, whilst the whites are fine, pure, bold and lively.
