A blend of Chardonnay, Marsanne, and Roussanne cultivated on the Terrasses du Larzac limestone soils for a smooth and expressive cuvée.
More infoIn this cuvée, Marsanne and Roussanne add further complexity to a Chardonnay grown on the lacustrine limestone terroir of the Terrasses du Larzac. Vineyards, nurtured with the utmost care, vine by vine, are tended exclusively by hand and produce very low yields, about 20 hl per hectare, of ripe and concentrated berries. Each variety is harvested and vinified separately, grapes are pressed immediately, and juices are fermented in second-hand barrels purchased in Burgundy. The fermentation process involves only natural yeasts and is followed by a twelve-month ageing period on the lees.
This haute couture vinification produces an expressive cuvée, where floral, white fruit, citrus, and fresh herb scents intertwine. A full-bodied, almost smooth palate is offset by an invigorating acidity, producing a well-balanced wine. A saline nuance and a hint of bitterness mark the finish of this excellent Languedoc wine, which will enhance both fish and white meat dishes.

About the Producer Saint-Sylvestre
Vincent Guizard cleared some land and planted new plots of vines on rolled pebbled hillsides that stretch up to a forest while he was working with Frédéric Poutarlié, the winemaker at and owner of Domaine de Montcalmès. These plots are located around Brousses which is situated between Aniane and Puechabon in the southwest of France. Vincent Guizard created his own winery with his wife Sophie in 2010, keeping the vineyard he planted which today covers eight hectares. The couple have chosen to work in a sustainable manner, preferring to carry out the work by hand to care for the terroir and the soil vitality. Each plot is tended to with care and each vine is treated as an individual. Together they have learnt how to graft vines to be able to easily replace those that are too old or ill. In the cellar, the work is also carried out in a sustainable manner to be able to show off the beauty of the terroir in these fruity and illuminous wines.
