The wine
Created in 1840, Domaine Ferret is located in the natural amphitheatre of Fuissé. Today the property of Maison Louis Jadot, this 18-hectare vineyard is managed by Audrey Braccini, who continues the domain’s expertise. It is now an essential Mâconnais domain.
The Saint-Véran of Domaine Ferret comes from a small plot of 35 ares whose vines were planted in 1991. Fermentation and élevage are done in barrels, on total lees at first and then on fine lees until the bottling process. Gentle bâtonnage is carried out at the end of the fermentation and at the start of élevage. It is a wine with aromas of peach, linden, hawthorn, citrus and almond. Equally well-rounded, fresh and fruity, the palate is highly vivacious. Ideal with simply cooked seafood.
