The wine
The owner of this domain, Gaëtan Charloux, has always been committed to the preservation of his 55 hectares, and this through sustainable agriculture. Château La Cardonne was quickly accepted by Terra Vitis and received an HVE certificate all the way back in 2006. The terroir here is a mosaic of distinct soils, varying from deep gravel to clay and blue marl. 55% Cabernet Sauvignon makes up the backbone of this wine with its superb tannic structure, whilst the Merlot brings red fruit aromas with lovely roundness on the palate. A 5% dose of Petit Verdot finishes the blend off with its spicy notes and tart freshness. It undergoes a traditional vinification with the grapes macerated and fermented for up to a few weeks. The wine is matured in French oak barrels for a duration that depends on the vintage. When it comes to food pairings, a rib steak cooked with shallots is perfect. This cuvée can be aged for five to ten years.
